Fortnum & Mason has officially opened the doors to The Biscuitorium, a brand-new immersive experience dedicated entirely to biscuits at its iconic Piccadilly flagship store.
Spanning more than 200 square metres on the mezzanine level of the ground floor, the new space is a theatrical celebration of Britain’s enduring love affair with biscuits. From heritage recipes to inventive new flavours, The Biscuitorium brings together craftsmanship, creativity and indulgence in one destination designed to delight visitors in every crumb.
A Biscuit-Lover’s Playground in the Heart of London
Inside The Biscuitorium, visitors are greeted by a vibrant world of beautifully designed Fortnum’s biscuit tins, each displayed like collectable works of art. Every product is signposted with detailed tasting notes, including flavour profiles, texture insights, ideal tea pairings and even recommended “dunking times”.
This playful yet luxurious approach transforms biscuit shopping into an interactive tasting journey, reinforcing Fortnum & Mason’s reputation for elevated food experiences.
The Biscuit Library: Discover Your Perfect Dunker
One of the standout features of The Biscuitorium is The Biscuit Library, an interactive tasting concept designed to help customers find their ideal biscuit match.
Visitors can explore 12 flavour profiles, ranging from Buttery & Traditional to Dark & Decadent, as well as Gluten-Free & Vegan options. By selecting their preferred taste profile, guests are matched with their perfect biscuit—illuminated and ready to be discovered.
It’s a modern, sensory take on personalised retail that blends digital interaction with traditional craftsmanship.
Made in Piccadilly: Freshly Baked Luxury
Behind a ceiling mural created by decorative artist Tess Newall lies the Made in Piccadilly counter, where Fortnum’s pastry chefs craft freshly made sandwich biscuits on-site.
Led by Executive Pastry Chef Roger Pizey, the selection includes inventive flavour combinations such as:
- Oat & Ganache
- Eton Mess
- Chocolate, Peanuts & Caramel
These freshly baked creations highlight Fortnum’s continued focus on artisanal quality and innovation.
Meet the Whoppalossus: Fortnum’s Biggest Biscuit Ever
One of the most eye-catching creations in the launch is the Whoppalossus, the largest biscuit ever made by Fortnum & Mason.
Weighing 400g and measuring 15.5cm in diameter, this indulgent chocolate-coated biscuit is designed for sharing—or not. Each version features two layers of buttery oat biscuit filled with combinations such as:
- Marshmallow & Salted Almond Caramel
- Pistachio & Raspberry Marshmallow
It’s part dessert, part spectacle, and entirely indulgent.
Biscuits for Drinks: A New Way to Pair and Dunk
The Biscuitorium also introduces Fortnum & Mason’s first-ever Biscuits for Drinks collection, designed specifically to complement fine beverages.
Created to enhance flavour profiles, the range includes pairings such as:
- Yuzu & Pink Peppercorn biscuits for gin
- Vanilla & Smoked Sea Salt biscuits for whisky
Each biscuit is shaped for optimal dunking, adding a refined twist to a classic British ritual.
Over 70 Flavours and Sustainable Innovation
The expanded biscuit collection includes more than 70 flavours across classic Shortbreads, Florentines, iced biscuits and chocolate-enrobed treats. Returning favourites such as Fortnum’s Musical Biscuit Tins also make a comeback, playing classical melodies while revealing sweet selections inside.
New collectible tins feature designs inspired by the iconic Piccadilly clock and archival Fortnum’s characters, making them ideal keepsakes or gifts.
Sustainability is also central to the launch, with the introduction of refillable biscuit tins designed to reduce packaging waste. The initiative is expected to save over 100,000 tins from production annually.
A Celebration of Heritage and Innovation
Holly Warren, Biscuit Buyer at Fortnum & Mason, said:
“At Fortnum’s, biscuits have always held a special place in our hearts. The Biscuitorium is a space where we can celebrate both our heritage and our curiosity for new ideas… we wanted to create something truly immersive that invites customers to explore, discover and, most importantly, indulge.”
