From 24th to 28th March, this five-day feast will showcase a bold and imaginative menu, created by Executive Chef Jonathon Bowers. Serving up an innovative take on sweet and savoury, these exclusive dishes promise to transform the humble waffle into a canvas for creativity, delivering unexpected flavours and textures in a way only Duck & Waffle can – and with a stellar view for the finishing touch.
The menu highlights a range of inventive flavour combinations, from the Tiger Prawn Toast which delivers crispy waffle topped with pork, sesame, and ginger, complemented by a sweet chilli sauce, and the Waffle Dog, which offers roasted bratwurst, crispy shallots, pickled cucumber, and a rich curry sauce.
On the sweeter side, the Black Forest Waffle layers dark chocolate, cherry compote, and Chantilly cream for an indulgent treat, while the Lemon Drizzle Waffle combines lemon curd, limoncello sorbet, and a delicate lemon sponge waffle. Inspired by Chef Bowers’ childhood memories, The Blackbird deep-fries a waffle and pairs it with blackberry jam, fresh blackberries, and Carnation milk ice cream, making it the clear must-try on this year’s menu.
