Urban Greens, the London-based fast-casual eatery renowned for its flavour-first, nutritious bowls, has unveiled a new guest-chef creation: the Goan Dream salad. Developed in collaboration with cook, broadcaster, and author Crystelle Pereira and Finn Tonry, Head of Food at Urban Greens, the limited-edition dish celebrates Goan heritage through a vibrant, flavour-packed experience.
Inspired by Crystelle’s Goan roots, the Goan Dream salad is a joyful exploration of spice, texture, and balance. It combines aromatic Goan cafreal chicken with Camargue red rice, a curried coconut slaw, cherry tomatoes, pickled onions, and fresh coriander. Crunchy Bombay mix and a sweet-sour tamarind and date chutney add lift and contrast, delivering warmth, brightness, and depth in every bite.
“I’ve been a fan of Urban Greens for a long time, so creating a bowl with them felt incredibly natural,” says Crystelle Pereira. “The Goan Dream salad is a celebration of flavour, heritage, and balance, inspired by my Goan roots and love of vibrant, nourishing food. Each element complements the next, taking the palate on a journey through the bold, fragrant flavours of South India. As satisfying as it is delicious, the salad is naturally nutritious, offering a well-rounded balance of protein, fibre, and carbohydrates to keep you energised.”
