Set along the Thames at Fulham Pier, Flo Bar has collaborated with Hemmings to create a limited-edition Valentine’s cocktail menu that translates behavioural psychology into flavour-led experiences. Available throughout February, the edit uses aroma, texture, temperature, colour and taste to encourage ease, intimacy and shared moments — without forcing the conversation.

A recent addition to London’s evolving drinks scene, Flo Bar is a craft-led cocktail bar designed for unhurried moments. Bathed in natural light and framed by panoramic river views, the space champions calm, considered drinking — making it a natural fit for Valentine’s and Galentine’s celebrations alike.
With refined twists on classic cocktails and a botanical-leaning flavour profile, Flo Bar focuses on thoughtful execution rather than theatrics. The result is a setting that encourages guests to slow down, be present and genuinely connect — whether on a date, a catch-up with friends, or a solo pause from city life.
How Psychology Shapes the Valentine’s Cocktail Edit
For the Valentine’s menu, Beverage Manager Stefano Chila worked closely with Hemmings to create cocktails rooted in classic structures, each informed by behavioural insight. Rather than bold gimmicks, the menu focuses on subtle sensory cues — the kind that quietly shape how we feel around other people.
“Attraction and connection are often influenced by sensory experiences rather than conversation alone,” explains Hemmings. “When people share something that feels comfortable and considered, they tend to relax, open up and feel more in step with one another. That sense of ease is often where connection begins.”
Each cocktail is designed to support that emotional rhythm, turning a drink into a shared moment rather than just an order at the bar.
The Valentine’s Cocktail Menu at Flo Bar
Rose & Strawberry Negroni
A floral-led serve where Sakura and rose mist rise from the glass before the first sip. These comforting aromas are linked to familiarity and emotional warmth, helping set a relaxed tone from the outset.
Butterfly Collins
A colour-changing cocktail that invites shared attention and anticipation. Fresh, clean flavours pair with visual transformation, creating a playful yet calming sensory moment.
Flo Milk Punch
Whey-clarified to achieve a naturally silky texture, this serve layers rum, cacao, coconut, banana and citrus. Rounded mouthfeel and balance are key here — often associated with indulgence, care and comfort.
Pomegranate Margarita
Sweet, sour, bitter and heat collide in a bold but controlled serve. A touch of scotch bonnet introduces gentle warmth, creating a subtle physiological lift that can translate as excitement and heightened energy.
Strawberries & Cream (Non-Alcoholic)
Vanilla and strawberry combine to evoke nostalgic, reassuring aromas. Designed to feel soft and safe, this serve supports relaxed conversation without alcohol.
Sound, Space and Slowing Down
Beyond flavour, sound also plays a role in the Flo Bar experience. From February, low-tempo live music will be introduced on selected evenings, with piano performances designed to reflect behavioural insights around rhythm, pace and shared calm.
“Flo Bar has always been about creating a pause from the pace of everyday life,” says Chila. “With the river always in view, it’s a place where people can take their time and really enjoy being together. The Valentine’s cocktails follow that same idea — familiar, easy to settle into, but with details that make the moment feel special.”

Flo Bar sits alongside Brasserie Constance, the modern British brasserie by Michelin-starred chef Adam Byatt, and is part of the wider Fulham Pier destination — a riverside hub bringing together food, drink and year-round cultural programming.
While the Valentine’s cocktail menu runs throughout February, tables will be available to book on the evening of 13 February and all day on 14 February, allowing guests to plan their visit around the limited-edition edit.
