TAIWANESE CULINARY MASTER WALTER HSU BRINGS EXCLUSIVE THREE CUP CHICKEN NOODLES TO KUNG FU MAMA, COVENT GARDEN

Food lovers in London are in for a rare treat this February as Kung Fu Mama hosts a special two-day culinary event with acclaimed Taiwanese chef Walter Hsu. Known for his invitation-only kitchen OUAH.HANCHI in Taipei and now the force behind Wan Noodle Bar, Hsu will be creating a limited-edition Taiwanese Three Cup Chicken noodle dish exclusively at Kung Fu Mama’s Covent Garden location on 4th and 5th February 2026, from 2pm.

The collaboration sees Walter join forces with his brother Chris Hsu, co-founder of Kung Fu Mama, in a truly family-led culinary moment.

From Taipei’s Private Kitchens to London Noodles

Walter Hsu has long been celebrated for his fine-dining private kitchen experiences in Taipei, which are notoriously difficult to book. With Wan Noodle Bar, he distills this craftsmanship into a single bowl of noodles, combining precision, depth of flavour, and nourishing comfort food. Now, London diners can experience his signature approach, with refined Taiwanese cooking transformed into accessible, soulful dishes — perfectly in line with Kung Fu Mama’s philosophy.

A Taiwanese Classic Reimagined

The limited-edition Taiwanese Three Cup Chicken noodles are inspired by the traditional San Bei Ji dish. Oven-roasted chicken thigh is glazed in a fragrant sauce of sesame oil, soy sauce, rice wine, ginger, garlic, and chilli, then served over Kung Fu Mama’s signature sun-dried noodles. The rich, aromatic sauce coats every strand, creating a comforting yet refined taste of Taiwanese home-style cooking.

“This collaboration is deeply personal,” says Walter Hsu. “Cooking alongside my brother Chris at Kung Fu Mama is a rare chance to share our family’s culinary journey. We both believe in creating food that’s refined yet accessible, soulful yet nourishing — dishes that honour our heritage and bring people together.”

The dish will remain on the Kung Fu Mama menu until the end of February, giving Londoners the chance to enjoy these flavours in the lead-up to Lunar New Year, celebrating Taiwanese tradition and family cooking.
