Laphroaig Single Malt Scotch Whisky will soon be unveiling The Laphroaig Market in collaboration with Michelin-starred chef, Tom Aikens, which will celebrate some of London’s most interesting culinary pioneers who are pushing the boundaries of flavour today.
Opening from Friday21st to Sunday 23rd April in Borough Yards, London, Tom Aikens will prepare and serve six totally unique dishes to order, bringing to the fore the flavours of salt, fire, and peat – the three elements that make Laphroaig whisky unmatched in quality and flavour.

The three-day market will offer the public a unique interactive experience of being able to handpick the freshest market ingredients and have them cooked over an open fire in front of their eyes by Tom Aikens and his team.
Each dish has been designed by Tom Aikens exclusively for The Laphroaig Market, to evoke Islay’s salty seawater combined with the earthy smokiness of peat and malted barley, as well as to demonstrate the extraordinary flavours that can be created from unrivalled produce and exceptional cookery.
The market will feature food producers who have been selected for their shared passion for seasonal ingredients and perseverance for unparalleled flavour. One confirmed partner is family-run greengrocer Turnips who has been a fixture in the London food and restaurant scene for over 30 years, with a wide range of other food producers to be revealed soon.
Dishes on offer include: Lobster Roll with sudachi, spiced mayo, nori, fried cabbage and cicely, Steak Rib Eye with Laphroaig 10 year old shallot sauce, grilled onion and pink purslane, as well as cold smoked and charred cabbage with fermented grains and gremolata.
Moreover, each dish will be served with a bespoke Laphroaig cocktail or dram from the dedicated Laphroaig bar to bring out the flavours of salt, fire and peat.
