What To Drink Now: Pied-à-Terre Negroni

English vineyard Bolney Wine Estate has collaborated with David Moore, from Pied-à-Terre to craft a unique Negroni cocktail named after his restaurant – using their new Rosso Vermouth.

The Bolney Rosso Vermouth is a fortified wine and has distinctive flavour profiles, which come from the botanicals growing in Bolney’s own vineyard hedgerows. It is closely connected to Bolney’s wine making traditions, and is the first ever Sussex Rosso Vermouth.

Usually the masses of sloes and elderberries from the vineyard go to waste each year, but are now used to make the vermouth.

This sumptuous taste of the vermouth is the perfect accompaniment for making cocktails, now being served in Pied à Terre – one of London’s longest standing Michelin fine dining restaurants.

 

Pied-à-Terre Negroni 

  • 30ml Bolney Rosso Vermouth
  • 30ml Gin
  • 30ml Campari
  • 30ml Suze

Garnish

Twist of orange

Method

  • Add vermouth, gin, Campari and suze into an old fashioned glass and stir over cubed ice.
  • Add in a zest of orange.
  • Garnish with a twist of orange.
